Tasting Notes
**A bright, refreshing, and crisp green matcha.**
Fuji no Asa features a perfect balance of gentle, approachable bitterness and a vibrant, fresh tea flavor. Its aroma is refreshing, reminiscent of young spring leaves just touched by dew. When sipped, a crisp, invigorating sensation spreads across the palate. The finish is light and pleasant, leaving a bright, uplifting impression.
Its bright, lively flavor makes it incredibly versatile. The powder is exceptionally smooth and easy to drink. It can be enjoyed as a thin tea or a simple iced matcha with ice, and it pairs well with plant-based milks like oat milk to create a well-balanced latte.
Through an 8-month aging process, Fuji no Asa retains the tea leaves’ natural, pleasant bitterness while achieving a comfortable balance of sweetness and umami. Its fresh flavor, reminiscent of the crisp morning air, signals the start of your day.
The powder radiates a brightness reminiscent of a cloudless blue sky and boasts a vibrant green color.
Brewing it as a thin tea allows you to fully appreciate the lightness of Fuji no Asa.
Recommended for those who wish to enjoy a bright and refined matcha.

Manufacturing Process
“Beyond tradition, we pursue uncompromising purity.”
In the world of traditional matcha, “stone-ground” is still considered the gold standard. However, we have chosen to update that tradition. This is because the traditional method of grinding tea leaves by rubbing stones together cannot completely eliminate the physical risk of “minute stone fragments (impurities) and stone dust” contaminating the matcha.
“Why We Chose State-of-the-Art Precision Milling”
The latest bead mill adopted by Fuji Asahi-en does not rely on the friction of stones like a stone mill; instead, it uses airflow and specialized technology to finely grind the tea leaves.
By disrupting the tea leaf at the cellular level without thermal stress, our process preserves delicate aroma molecules and releases amino acids and antioxidants more fully.
- 100% Impurity-Free: Completely eliminates the risk of stone dust contamination caused by the wear and tear of stone mills. What you taste is nothing but pure tea leaves blessed by Mount Fuji.
- International-Standard Hygiene Management: Grinding takes place in a fully sealed environment within a clean room certified by the Japan Food Sanitation Bureau and FSSC 22000. The process completely blocks out 100% of external dust and bacteria.
- Ultimate Particle Control: We’ve achieved a smooth mouthfeel through “5-micron” precision control.
Prioritizing your body’s “safety” and “deliciousness” over traditional stone-grinding methods—that is the choice Fuji Asahi-en has made."
Features
[Fuji Asahi-en’s Manufacturing Process: Capturing the Energy of Mount Fuji]
Step 1: Tea Leaf Cultivation in Volcanic Soil
We cultivate tea leaves in the mineral-rich volcanic soil at the foot of Mount Fuji. By using “shade cultivation” to block sunlight for approximately 30 days prior to harvest, we maximize the accumulation of L-theanine, an amino acid that sharpens the mind.
Step 2: “Instant Steaming” to Preserve Freshness
Fresh, hand-picked tea leaves are steamed with high-pressure steam immediately after harvest. This instantly stops oxidation, locking in the vibrant green of Mount Fuji. Following a unique drying process, we select only the “parts with the highest concentration of theanine”—the raw material for matcha.
Step 3: “Master Blend” Based on 80 Years of Expertise
Skilled tea masters assess that year’s weather and the condition of the tea leaves, then blend them using a secret ratio passed down for 80 years. Here, we create the “golden ratio” of umami, sweetness, and nutrients—a balance that cannot be achieved with a single type of tea leaf.
Step 4: “Precision Milling”
We mill the tea in an FSSC 22000-certified clean room using state-of-the-art precision milling machines. This eliminates the risk of “fine stone particles”—similar to those found in stone mills—being mixed in, and minimizes nutrient degradation caused by friction heat. Uniform 5-micron particles deliver a silky-smooth texture and an astonishingly high rate of nutrient absorption (bioavailability).
