In the world of traditional matcha, “stone-ground” is still considered the gold standard. However, we have chosen to update that tradition. This is because the traditional method of grinding tea leaves by rubbing stones together cannot completely eliminate the physical risk of “minute stone fragments (impurities) and stone dust” contaminating the matcha.
“Why We Chose State-of-the-Art Precision Milling”
The latest bead mill adopted by Fuji Asahi-en does not rely on the friction of stones like a stone mill; instead, it uses airflow and specialized technology to finely grind the tea leaves.
By disrupting the tea leaf at the cellular level without thermal stress, our process preserves delicate aroma molecules and releases amino acids and antioxidants more fully.

Step 1: Tea Leaf Cultivation in Volcanic Soil
We cultivate tea leaves in the mineral-rich volcanic soil at the foot of Mount Fuji. By using “shade cultivation” to block sunlight for approximately 30 days prior to harvest, we maximize the accumulation of L-theanine, an amino acid that sharpens the mind.
Step 2: “Instant Steaming” to Preserve Freshness
Fresh, hand-picked tea leaves are steamed with high-pressure steam immediately after harvest. This instantly stops oxidation, locking in the vibrant green of Mount Fuji. Following a unique drying process, we select only the “parts with the highest concentration of theanine”—the raw material for matcha.
Step 3: “Master Blend” Based on 80 Years of Expertise
Skilled tea masters assess that year’s weather and the condition of the tea leaves, then blend them using a secret ratio passed down for 80 years. Here, we create the “golden ratio” of umami, sweetness, and nutrients—a balance that cannot be achieved with a single type of tea leaf.
Step 4: “Precision Milling”
We mill the tea in an FSSC 22000-certified clean room using state-of-the-art precision milling machines. This eliminates the risk of “fine stone particles”—similar to those found in stone mills—being mixed in, and minimizes nutrient degradation caused by friction heat. Uniform 5-micron particles deliver a silky-smooth texture and an astonishingly high rate of nutrient absorption (bioavailability).

Recommended Way To Drink
*You can use a household shaker or similar tool to froth the matcha. Feel free to enjoy matcha however you like!
Matcha Latte
If you want it sweeter, we recommend adding honey or oligofructose! It’s also delicious with almond milk or oat milk instead of regular milk!

100 mL (3.4 oz) 80°C (176°F) Pour boiling water into a teacup to cool it to 80°C, then pour into tea bowl.
3. Whisk
15 seconds Whisk vigorously 15 seconds, making an "M" shape.
4. Combine with milk
Pour the frothed milk over the matcha base. Enjoy your perfect matcha latte!
Straight Matcha
1. Sift matcha
2. Add hot water
60 mL (2 oz) 80°C (176°F) Pour boiling water into a teacup to cool it to 80°C, then pour into tea bowl.
3. Whisk
15 seconds Whisk vigorously 15 seconds, making an "M" shape.
4. Complete
Enjoy a moment of pure bliss! Of course, it’s delicious as is, but adding ice turns it into iced matcha—perfect for hot days.
Straight Matcha(Strong)

2. Add hot water
30 mL (1 oz) 80°C (176°F) Cool boiling water to 80°C in teacup, then pour into bowl, just covering matcha powder.
3. Whisk
15 seconds Mix slowly for 15 seconds moving back and forth.
4. Complete
